Corn & Bean Salad

Have you ever been trying so hard to lose weight you try so many different programs? That is definitely me!! Well, the one I keep coming back to is this plan**.  This time around I have lost 34 pounds in 11 months. Now that they have over 200 foods that are zero points I have made some recipes I may have stayed away from previously. How amazing is it that corn and beans are now zero points?!?!

This recipe came about because I have been trying to incorporate more veggies and protein into my diet.  I also wanted something quick and easy to assemble. That is the reason that I have included canned items.  The convenience of being able to just open a can and dump it in makes it so much easier to make this recipe. 

Quite frequently I will grill chicken breast (which is also zero points!) to dice up and mix with this recipe for a complete dish.  I have also been known to just get a bowl of this and either eat it by itself or use some tortilla chips (not zero points!) to scoop it up like salsa. 🙂 

When I was creating this recipe I felt like just putting everything in my bowl that it was still just lacking something. So seasoning of some sort was necessary. Since there was already onions and cilantro my logical direction was my taco seasoning! Between the red wine vinegar, lime juice, taco seasoning it really rounds out this dish.

You can use this as a side dish, salsa, green salad topping or mix it with another protein for a complete dish.
