Sweet Potato Kale Chili

Have you ever felt so unmotivated to do anything, especially cook? That has definitely been me for quite some time. Which is unusual for me because I love to cook!!! Well, I have been feeling pretty un-inspired to cook let alone create anything new. A little over a month ago one of my fellow FMB contributors offered up some meals from one of those meal delivery services.  I was quite unsure of how this whole situation would go over because my husband is REALLY picky. Surprisingly enough it was a winner!

I’m not really sure why or how this quickly became such a winner of a recipe in my house. Generally, I am the only one who eats vegetables around here. My husband said that it was a hearty bowl of goodness and that I could definitely make it again! WHAT? WOW! 

I have recreated this recipe since because it was so well liked. The second time I made this I had some leftover ground elk, that I had seasoned with my taco seasoning, and I added it in to “beef” up the chili. It was a nice addition. The next time I make it I may even try spinach rather than the kale. 

Who here struggles with finding recipes that will please every palate in their home??

Beckie Cochran, a Southern California native, has always had a passion for people and relationships. Growing up she had aspirations of becoming a youth pastor but quickly found herself to be too much of a social butterfly for college. She was working in the insurance industry when she met her husband, Bryan, on the internet in October 2004 they were married in May of 2005. She started working with her husband at the family business, until her husband had two back surgeries and they had their two children Attalia (7) and Nicodemus (5). They didn't want to raise their children in Los Angeles so they relocated to Flagstaff and built a house on Bryan's parents property in May 2014.
