Our family decided for fall break this year to go to the Mouse House and 3/4 of us came back with a crazy cough! Since I am one of the three with a cough I wanted something warm to soothe my throat. I REALLY want to be a tea drinker I just can’t do it! The herbal flavor of tea gets me EVERY time! HA! So, given that I really don’t want to drink coffee at night, nor do I really want to give it to my kids, I was trying to think of something that is warm that isn’t horribly calorie ridden like hot chocolate. I landed on apple cider! Apple cider is semi-healthy and doesn’t have so many calories I feel guilty for drinking it. 😉
Now since we had such a mild winter last year our tree produced something close to 3,000 apples!! Yes you read that right! I also didn’t feel like going out to get anything since remember most of us have a lovely cough going on. So, I went out to the back yard and picked 10-12 regular sized apples and added in some cinnamon, all spice, nutmeg and brown sugar. Then I added enough water to cover the apples by two inches and closed up the instant pot and set the manual timer for 60 minutes. And when I opened the Instant Pot my house smelled so AMAZING! Even my daughter walked in and said what smells so yummy? This is definitely a keeper! It’s not an overly sweet cider, I feel its a well balanced apple cider. This recipe came about all because I didn’t want to drive to the store to help with my crazy cough but it may very well become a family favorite.
